Popeye’s Copycat Fried Chicken Recipe

For the Chicken
2 lbs chicken pieces (drumsticks, thighs, wings)
2 cups buttermilk
2 cups all-purpose flour

1 teaspoon black pepper
1 teaspoon salt
1 teaspoon Creole seasoning
1 teaspoon Cajun seasoning

Instructions

  1. Marinate the Chicken
    In a large bowl, combine the buttermilk and hot sauce. Add the chicken pieces and mix well until fully coated.
    Cover and refrigerate for at least 4 hours, preferably overnight for maximum flavor and tenderness.
  2. Prepare the Seasoned Flour
    In another large bowl, mix together:
    Flour
    Paprika
    Garlic powder
    Onion powder
    Cayenne pepper
    Black pepper
    Salt
    Creole seasoning
    Cajun seasoning
    Stir until evenly combined.
  3. Coat the Chicken
    Remove the chicken from the buttermilk marinade, letting excess drip off.
    Dredge each piece thoroughly in the seasoned flour mixture. Press the flour onto the chicken to create a thick coating.
    For extra crispy chicken, dip the coated chicken back into the buttermilk and coat again with flour.
  4. Fry the Chicken
    Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
    Carefully place chicken pieces into the hot oil without overcrowding the pan.
    Fry:
    Drumsticks & thighs: 12–15 minutes
    Wings: 8–10 minutes
    Cook until golden brown and the internal temperature reaches 165°F (74°C).
