Ingredients :
For the Loaf:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1 1/2 cups fresh or canned peaches, chopped (if using canned, make sure to drain well)
For the Cream Cheese Swirl:
- 8 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
Préparations :
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch (23×13 cm) loaf pan.
- Prepare the Cream Cheese Swirl: In a medium-sized bowl, beat together the softened cream cheese, 1/4 cup granulated sugar, 1 egg, and 1 teaspoon of vanilla extract until smooth. Set aside.
- Prepare the Peaches: If you’re using fresh peaches, peel and chop them into small pieces. If you’re using canned peaches, make sure to drain them well and pat them dry with a paper towel.
- Prepare the Loaf Batter: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large mixing bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream. Start and end with the dry ingredients. Mix until just combined.
- Add the Peaches: Gently fold in the chopped peaches.
- Assemble the Loaf: Pour half of the batter into the prepared loaf pan. Spread it out evenly. Then, spoon the cream cheese mixture over the batter, spreading it out as evenly as possible. Finally, pour the remaining batter over the cream cheese layer.
- Swirl the Layers: Use a butter knife or a toothpick to gently swirl the cream cheese mixture into the batter. Don’t overmix; you want a marbled effect.
- Bake: Place the loaf pan in the preheated oven and bake for about 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool: Allow the loaf to cool in the pan for about 10-15 minutes, then remove it from the pan and transfer it to a wire rack to cool completely.
- Serve: Once the Peaches & Cream Cheese Loaf is completely cool, slice and serve. Enjoy!
This delicious loaf is perfect as a dessert, snack, or even for brunch. The combination of peaches and cream cheese is sure to be a crowd-pleaser.
