Easy Stuffed Pepper Casserole

Ingredients :

  • 1 pound ground beef (or turkey)
  • 3 large bell peppers (any color), diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup cooked rice (white or brown)
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 can (8 ounces) tomato sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)

Préparations :

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Cook the Ground Beef: In a large skillet, cook the ground beef over medium heat until it’s browned and no longer pink. Drain any excess fat.
  3. Add Vegetables: Add the diced bell peppers, onion, and minced garlic to the skillet with the cooked ground beef. Cook for about 6-8 minutes, or until the vegetables are softened.
  4. Seasoning: Stir in the Italian seasoning, paprika, salt, and pepper. Mix well to combine.
  5. Combine Ingredients: Add the cooked rice, diced tomatoes, and tomato sauce to the skillet. Stir everything together until well combined. Let it simmer for a few more minutes to allow the flavors to meld together.
  1. Transfer to Casserole Dish: Transfer the mixture from the skillet into a lightly greased 9×13 inch casserole dish, spreading it out evenly.
  2. Top with Cheese: Sprinkle the shredded cheese evenly over the top of the casserole.
  3. Bake: Cover the casserole dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
  4. Serve: Once done, remove the casserole from the oven and let it cool for a few minutes before serving. Garnish with fresh chopped parsley if desired.
