Instructions
- Add the eggs, cream cheese, heavy cream, melted butter, and salt to a blender.
- For sweet crepes, add vanilla and your preferred sweetener.
- Blend for about 30–45 seconds until completely smooth and slightly frothy.
- Let the batter rest for 5 minutes.
- Heat a nonstick skillet over medium-low heat and lightly grease it with butter.
- Pour about ¼ cup of batter into the center. Immediately tilt and rotate the pan to spread it into a thin circle.
- Cook for 1–2 minutes, until the top is mostly set and the edges release easily.
- Carefully flip and cook the second side for another 30–60 seconds.
- Transfer to a plate and repeat with the remaining batter. Keep the cooked crepes stacked so they stay soft.
- Roll them individually or spread with your favorite filling before rolling.
Filling ideas
For a sweet version, try whipped cream cheese, sugar-free chocolate spread, peanut butter, cinnamon, or a few berries. For savory crepes, skip the vanilla and sweetener and fill them with cheese, chicken, turkey, eggs, or sautéed vegetables.
Tip: These crepes are more delicate than traditional flour crepes. Keep the heat moderate and wait until the first side is fully set before flipping.
Makes: about 8–10 thin crepes
Storage: Refrigerate in an airtight container for up to 3 days.
And while low-carb eating can reduce water weight for some people, these crepes themselves don’t specifically “dry out” the body.Categ
