Chicken salad on croissants

Ingredients :

For the Chicken Salad:

  • 2 cups cooked chicken breast, diced or shredded
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt or sour cream (for a creamier texture)
  • 1/4 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup red grapes, halved
  • 1/4 cup dried cranberries or raisins (optional for sweetness)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard (optional, for added flavor)

  • Croissants (as many as needed)
  • Lettuce leaves
  • Tomato slices (optional)
  • Swiss cheese slices (optional)

Préparations :

1. Prepare the Chicken:

  • You can use leftover roasted or grilled chicken or cook chicken breasts specifically for this salad. Season the chicken breasts with salt and pepper and then bake or grill until fully cooked. Once cooked, let them cool, and then dice or shred them into bite-sized pieces.

2. Make the Dressing:

  • In a mixing bowl, combine the mayonnaise, Greek yogurt (or sour cream), fresh lemon juice, and Dijon mustard (if using). Mix until the ingredients are well combined. This will be the creamy base for your chicken salad.

3. Mix the Chicken Salad:

  • In the same mixing bowl with the dressing, add the diced or shredded chicken, chopped celery, chopped red onion, halved red grapes, and dried cranberries (or raisins if using). Gently fold all the ingredients together until the chicken is well coated with the dressing. Taste and adjust the seasoning with salt and pepper as needed.

4. Assemble the Croissant Sandwiches:

  • Slice the croissants in half horizontally. If desired, you can lightly toast the croissants for added texture and flavor.

  • Spoon a generous portion of the chicken salad mixture onto the lettuce.
