Ingredients :
– 4 medium potatoes, peeled and diced into cubes

– 1 bell pepper (any color), sliced
– 1 smoked sausage (such as kielbasa or Andouille), sliced into rounds

Préparations :
1. Heat the olive oil or vegetable oil in a large skillet over medium heat.
2. Once the oil is hot, add the diced potatoes to the skillet. Spread them out into an even layer to ensure they cook evenly. Cook the potatoes for about 10-12 minutes, stirring occasionally, until they start to become golden brown and crisp on the edges.
3. Add the sliced onions and bell peppers to the skillet with the potatoes. Stir to combine, and continue cooking for another 5-7 minutes, or until the onions are softened and the peppers are slightly tender.
4. Push the potatoes, onions, and peppers to one side of the skillet, and add the sliced smoked sausage to the empty side. Cook the sausage slices for 3-4 minutes on each side, or until they are heated through and lightly browned.
5. Once the sausage is cooked, mix it together with the potatoes, onions, and peppers in the skillet. Season with salt, pepper, and any optional herbs or spices you like, such as garlic powder or paprika. Stir to combine and let everything cook together for another 2-3 minutes, allowing the flavors to meld.
6. Once everything is heated through and well combined, remove the skillet from the heat.
