Ingredients:
- 2 cans (14.75 oz each) canned salmon, drained and flaked
- 2 large eggs
- ½ cup breadcrumbs
- ¼ cup finely chopped onion
- ¼ cup finely chopped bell pepper
- 2 tbsp mayonnaise
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley, chopped
- 2–3 tbsp vegetable oil, for frying
Method:
- In a large bowl, combine the flaked salmon, eggs, breadcrumbs, onion, bell pepper, mayonnaise, lemon juice, Dijon mustard, garlic powder, salt, pepper, and parsley. Mix until well combined.
- Shape the mixture into 6–8 equal-sized patties, pressing them firmly so they hold together.
- Heat the oil in a large skillet over medium heat. Carefully place the patties in the hot oil and cook for 4–5 minutes per side, until golden brown and crispy.
- Transfer the salmon patties to a paper towel-lined plate to drain excess oil. Serve warm with lemon wedges, tartar sauce, or your favorite side dish.
