MEATLOAF IN A MUFFIN PAN

Ingredients :

  • One pound of ground beef (or ground pork combined with ground beef)
  •  1 small onion, finely chopped
  •  1 small bell pepper, finely chopped
  •  1/2 cup breadcrumbs
  •  1/4 cup milk
  •  1/4 cup ketchup
  •  1/4 cup barbecue sauce (optional)
  •  1 egg
  •  1 teaspoon Worcestershire sauce
  •  1 teaspoon garlic powder
  •  1 teaspoon onion powder
  •  1 teaspoon salt
  •  1/2 teaspoon black pepper
  •  1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)

Préparations :

  • Preheat the oven to 375°F (190°C). Grease a 12-cup muffin tin lightly or line it with liners.
  •  Prepare the Meat Mixture: In a large bowl, combine the ground beef, chopped onion, chopped bell pepper, breadcrumbs, milk, ketchup, barbecue sauce (if using), egg, Worcestershire sauce, garlic powder, onion powder, salt, black pepper, and shredded cheese.
  • Mix thoroughly, being careful not to overmix.
  •  Fill the Muffin Pan: Divide the meat mixture evenly among the muffin cups, pressing down lightly to ensure they hold together.
  •  Prepare the Topping: In a small bowl, mix together the ketchup, brown sugar, and mustard. Spoon the topping over each mini meatloaf, spreading it evenly.

  • Bake: Place the muffin pan in the preheated oven and bake for 20-25 minutes, or until the meatloaves are cooked through and the internal temperature reaches 160°F (71°C).
  •  Serve: Allow the mini meatloaves to rest for a few minutes before removing them from the muffin pan. Serve with your favorite sides, such as mashed potatoes, green beans, or a salad.
