Ingredients:
Meatballs & Veggies:
- 2 eggs (1 yolk separated)
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp dried oregano
- 1 medium zucchini, grated or finely chopped
- 250 g (9 oz) minced turkey
- 1 spring onion, finely chopped
- 1 garlic clove, minced
- 30 g (1 oz) mozzarella, shredded
- 1 carrot, grated
Instructions:
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine eggs, salt, pepper, oregano, and grated zucchini.
- Add the minced turkey, spring onion, garlic, mozzarella, and grated carrot into the mixture. Stir everything well until combined.
- Form meatballs from the mixture, using your hands to shape them into small rounds.
- Place the meatballs on a baking dish or tray, and brush the separated egg yolk over the top of each one for a golden finish.
