Recipe Introduction:

This quick and easy recipe combines meatballs and vegetables to create a delicious and hearty dinner in just 10 minutes! The combination of turkey, zucchini, and mozzarella creates a flavorful filling, while the carrots and spring onions add texture and color. Perfect for a weeknight meal, this dish is both light and satisfying.


Ingredients:

Meatballs & Veggies:

  • 2 eggs (1 yolk separated)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp dried oregano
  • 1 medium zucchini, grated or finely chopped
  • 250 g (9 oz) minced turkey
  • 1 spring onion, finely chopped
  • 1 garlic clove, minced
  • 30 g (1 oz) mozzarella, shredded
  • 1 carrot, grated

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine eggs, salt, pepper, oregano, and grated zucchini.
  3. Add the minced turkey, spring onion, garlic, mozzarella, and grated carrot into the mixture. Stir everything well until combined.
  4. Form meatballs from the mixture, using your hands to shape them into small rounds.
  5. Place the meatballs on a baking dish or tray, and brush the separated egg yolk over the top of each one for a golden finish.
  6. Bake the meatballs in the oven for about 10 minutes or until they are golden and cooked through.
  7. Serve hot, and enjoy this delicious and quick meal!
