Ingredients:

  • 1 lb beef or chicken liver, cleaned and cut into pieces
  • 2 large onions, thinly sliced

  • 1/4 cup flour (optional, for dredging the liver)
  • Salt and pepper to taste

Instructions:

  1. Prepare the liver: If you prefer, dredge the liver pieces in flour to help them brown and thicken the sauce later. Season with salt and pepper.
  2. Cook the onions: In a large skillet, melt the butter or heat the oil over medium heat. Add the sliced onions and cook until they are soft and caramelized, about 10-12 minutes. Remove them from the skillet and set them aside.
  3. Cook the liver: In the same skillet, add the liver pieces. Cook for 3-4 minutes on each side, until browned. You can cook the liver in batches if needed to avoid overcrowding the pan.
  4. Simmer: Once the liver is browned, add the broth to the skillet and return the onions to the pan. Stir to combine. Reduce the heat and let everything simmer for about 10-15 minutes until the liver is fully cooked and tender, and the sauce has thickened slightly.
  5. Serve: Once done, adjust the seasoning with more salt and pepper if needed. Serve hot with mashed potatoes, rice, or crusty bread.
