Golden Crumble Custard Delight

Ingredients

For the custard:

  • 2 cups (500 ml) whole milk
  • 1 cup (240 ml) heavy cream
  • 4 large eggs
  • ½ cup (100 g) sugar
  • 1 tsp vanilla extract
  • Pinch of salt

For the crumble topping:

  • 1 cup crushed biscuits (like digestive or graham crackers)
  • 3 tbsp melted butter
  • 2 tbsp brown sugar

1. Prepare the custard

  • Preheat oven to 325°F (160°C).
  • In a saucepan, gently heat milk + cream until warm (not boiling).
  • In a bowl, whisk eggs, sugar, vanilla, and salt.
  • Slowly pour warm milk into the egg mixture while whisking (to avoid scrambling).

2. Assemble

  • Pour the custard into a greased baking dish.
  • Mix crushed biscuits, melted butter, and brown sugar.
  • Sprinkle evenly over the top.

3. Bake

  • Place dish in a larger pan and add hot water halfway up the sides (water bath).
  • Bake for 40–50 minutes, until set but slightly jiggly in the center.

4. Cool & serve

  • Let cool slightly (or chill for a firmer texture).
  • Scoop and enjoy warm or cold!

  • Add cinnamon or nutmeg for extra warmth
  • Swap biscuits for crushed cookies (like shortbread or vanilla wafers)
  • Drizzle caramel on top for an indulgent finish
