Ingredients :
For the Crust:
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 1/4 cup ice water
For the Filling:
- 6 slices bacon, cooked and crumbled
- 1 cup shredded Gruyere or Swiss cheese
- 1/2 cup shredded cheddar cheese
- 1/2 medium onion, finely chopped
- 4 large eggs
- 1 1/2 cups half-and-half or heavy cream
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground nutmeg (optional)
Préparations :
- Prepare the Crust:
- In a large bowl, mix the flour and salt.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Add the ice water, one tablespoon at a time, until the dough comes together.
- Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Roll Out the Dough:
- On a lightly floured surface, roll out the chilled dough to fit a 9-inch pie dish.
- Transfer the dough to the pie dish, pressing it into the bottom and up the sides.
- Trim any excess dough and crimp the edges.
- Line the crust with parchment paper and fill it with pie weights or dried beans.
- Bake the crust for 15 minutes, then remove the parchment paper and weights and bake for an additional 5 minutes until lightly golden.
- Prepare the Filling:
- In a medium bowl, whisk together the eggs, half-and-half or cream, salt, black pepper, and nutmeg (if using).
- Spread the crumbled bacon, shredded Gruyere or Swiss cheese, cheddar cheese, and chopped onion evenly over the baked crust.
- Assemble the Quiche:
- Pour the egg mixture over the bacon, cheese, and onions in the crust.
- Bake:
- Bake the quiche in the preheated oven for 35-40 minutes, or until the filling is set and the top is golden brown.
- Allow the quiche to cool slightly before slicing.
- Serve:
- Serve warm or at room temperature, accompanied by a fresh green salad.
