Baked Bacon, Egg, and Cheese Pinwheels

A perfect Sunday breakfast that’s quick, delicious, and sure to impress your family!

Ingredients:

• 1 sheet puff pastry (thawed if frozen)

• 6 slices of cooked bacon (crumbled or chopped)

• 3 large eggs (2 scrambled, 1 for egg wash)

• 1 cup shredded cheese (cheddar, mozzarella, or a mix)

• 1/4 cup chopped green onions (optional)

• Salt and pepper to taste

Instructions:

1. Preheat the Oven:

• Preheat your oven to 375°F (190°C).

• Line a baking sheet with parchment paper.

2. Prepare the Eggs:

• Scramble 2 eggs in a pan with a pinch of salt and pepper. Let them cool slightly.

3. Assemble the Pinwheels:

• Roll out the puff pastry sheet on a lightly floured surface.

• Evenly spread the scrambled eggs over the pastry, leaving a 1-inch border.

• Sprinkle the shredded cheese and bacon over the eggs. Add green onions if desired.

4. Roll and Slice:

• Carefully roll the puff pastry into a tight log, starting from one edge.

• Use a sharp knife to slice the log into 1-inch thick pinwheels.

5. Egg Wash:

• Place the pinwheels on the prepared baking sheet, spacing them slightly apart.

• Beat the remaining egg and brush it over the tops of the pinwheels for a golden finish.

6. Bake:

• Bake for 15–20 minutes, or until the pinwheels are puffed and golden brown.

7. Serve:

• Let the pinwheels cool for a few minutes before serving. Enjoy warm with your favorite breakfast sides!

Tips:

• Add a drizzle of hot sauce or a sprinkle of paprika for extra flavor.

• Swap bacon for sausage or add veggies like spinach or bell peppers for variety.
