Strawberry Meringue Ice Cream Dessert

Ingredients :

Strawberry Ice Cream:

  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/4 cup strawberry jam (optional, for extra flavor)

Meringue Pieces:

  • 2 large egg whites
  • 1/2 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract

Toppings:

  • Fresh strawberries, for garnish
  • Mint leaves, for garnish (optional)

Préparations :

  1. Prepare Strawberry Ice Cream:
    • In a bowl, combine the sliced strawberries and granulated sugar. Let them sit for about 15-20 minutes until the strawberries release their juices.
    • Transfer the strawberry mixture to a blender or food processor and blend until smooth.
    • In a large mixing bowl, combine the strawberry puree, heavy cream, whole milk, and vanilla extract. If you want a stronger strawberry flavor, add the strawberry jam.
    • Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
    • Transfer the ice cream to a lidded container and freeze for at least 4 hours or until firm.
  2. Prepare Meringue Pieces:
    • Preheat your oven to 225°F (110°C). Line a baking sheet with parchment paper.
    • In a clean, dry bowl, beat the egg whites with an electric mixer on medium speed until foamy.
    • Add the cream of tartar and continue beating until soft peaks form.
    • Gradually add the granulated sugar, one tablespoon at a time, beating on high speed until stiff peaks form and the mixture is glossy.
    • Beat in the vanilla extract.
    • Using a spoon or a piping bag, create small meringue kisses or dollops on the prepared baking sheet.
    • Bake for 1.5 to 2 hours until the meringues are dry and crisp. Turn off the oven and let the meringues cool completely in the oven.
  3. Assemble the Dessert:
    • Scoop the strawberry ice cream into bowls.
    • Garnish with fresh strawberries.
    • Crush some of the meringue pieces and sprinkle them over the ice cream.
    • Add a few whole meringue kisses on top for decoration.
    • Garnish with mint leaves if desired.
