Irish Beef Stew Recipe
A hearty Irish Beef Stew made with tender beef, potatoes, carrots, onions, and a rich, savory broth. This comforting one-pot meal is perfect for chilly evenings and family dinners.
Ingredients
* 2 pounds (900g) beef chuck, cut into 1½-inch cubes
* 2 tablespoons all-purpose flour
* 1 teaspoon salt
* ½ teaspoon black pepper
* 2 tablespoons olive oil
* 1 large onion, chopped
* 3 cloves garlic, minced
* 4 cups beef broth
* 2 tablespoons tomato paste
* 1 tablespoon Worcestershire sauce
* 1 teaspoon dried thyme
* 2 bay leaves
* 4 medium Yukon Gold potatoes, peeled and cubed
* 4 large carrots, sliced
* 2 celery stalks, sliced
* 1 cup frozen peas
* 2 tablespoons chopped fresh parsley (for garnish)
Instructions
1. Toss the beef with the flour, salt, and black pepper until evenly coated.
2. Heat the olive oil in a large Dutch oven over medium-high heat.
3. Brown the beef in batches, about 3–4 minutes per side. Remove and set aside.
4. In the same pot, sauté the onion for 4 minutes, then add the garlic and cook for 1 minute.
5. Stir in the tomato paste and cook for 1 minute.
6. Pour in the beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pot.
7. Add the browned beef, thyme, and bay leaves. Bring to a gentle boil.
8. Reduce the heat to low, cover, and simmer for 1½ hours.
9. Add the potatoes, carrots, and celery. Cover and cook for another 35–40 minutes, or until the vegetables are tender.
10. Stir in the peas during the last 5 minutes of cooking.
11. Remove the bay leaves, garnish with fresh parsley, and serve hot with crusty bread or Irish soda bread.
